Recipe: Kiana Kona Island Banana Bread

 

Recipe:

Ingredients:

  • 1 1/4 cup almond flour (whole wheat or white flour work too)
  • 1/2 tsp salt (optional)
  • 1 tsp. baking soda
  • 1/3 cup virgin coconut oil
  • 1 Tbs. powdered stevia (or 1/2 cup white sugar if you’re naughty 🙂
  • 2 large ripe bananas mashed
  • 2 eggs slightly beaten
  • 1/2 cup steel cut oats or regular oats (optional but adds extra nutrition and texture)
  • 1 Tbs. chia seeds
  • 1/4 cup unsweetened coconut to put on top last 5 min. baking optional but so good!
  • 1/4 cup dried fruit, trail mix, wheat germ, flax seeds, cereal or any seeds you like (optional)
  • 1/2 cup toasted walnuts or almonds optional

Topping: Protein rich, creamy Greek Yogurt, sprinkle nutmeg and crunchy toasted nuts.

Directions:

Get 2 bowls. Preheat oven 350 degrees. Spray non stick spray on bread loaf pan. Stir dry ingredients in large bowl.

In separate bowl mix coconut oil, stevia, mashed bananas and eggs.  Pour wet ingredients into dry ingredients. Fold together.  Pour into bread / loaf pan

Bake 35-45 minutes until brown and tan. Toothpick should come out clean. (Ovens vary)

While it’s baking, toast some walnuts or almonds in the oven. 300 degrees for 15 minutes. Put in 1 layer in pan or cookie sheet.

I love it when it’s slightly crunchy on top and moist on the inside. Mmmm.

Cool 10 minutes before serving.

Enjoy for breakfast topped with Greek Yogurt or in the afternoon with a cup of Coconut Coffee

Tips:

  • add dried fruit, trail mix, steel cut oats, wheat germ or flax seed to the mix boost the nutritional value & TEXTURE – I love texture
  • This only makes 1 loaf, make a double batch and freeze one for later or give to a Friend
  • enjoy as a pre workout treat for a blast of energy
  • I eat protein with EVERY snack and meal. So top this with protein rich Greek Yogurt & toasted almonds for the crunch factor

This is one of my all time favorite recipes! This fool proof recipe has been in my family for decades. I modified it so it’s  healthier! Coconut oil instead of butter, added steel cut oats for more texture and nutrition, protein, added toasted almonds for more protein and an extra banana for even more potassium. This is a simple and delicious way to use up over ripe bananas. So before you toss out those too ripe bananas, make this yummy bread. It’s so delicious and easy to reheat in the toaster oven. This is the best banana bread I’ve ever tasted. It’s slightly crunchy and sweet on the crust and super moist on the inside.  No sugar added! Delicious comfort food and no guilt. Your Ohana (family) will love it.

Nutrition Facts: Bananas

Bananas are an excellent source of potassium, very low in Saturated Fat, Cholesterol and Sodium. It is also a good source of Dietary Fiber, Vitamin C, Potassium and Manganese, and a very good source of Vitamin B6. The downside is that most of the calories are from sugar (natural sugar btw.) To me, that makes it a good pre-workout snack to give me lots of energy to max out my workouts. Stock up on Bananas! I usually buy at least a dozen bananas every time I go to the grocery store.  Those are a few of the reasons I stock up.

I peel and cut them in half and keep in the freezer to add to smoothies and protein shakesNature’s pre-wrapped snack: put them in the kids’ lunch boxes, my gym bag, have them pre-workout. But sometimes I have too many and they aren’t eaten as fast as I thought they would be and they get over ripe.
