As a child, I grew up eating tofu in stir fry dinners. Tofu is a great source of protein, is low in fat and carbohydrates. I love making this special healthy dessert recipe that uses silken tofu Hope you enjoy it as much as my family and I do!
Healthy dessert recipe using 70 % dark cocoa and tofu. Dark chocolate is loaded with anti oxidants and tofu is high in protein. This is a delicious dessert that is creamy like chocolate mousse. I serve it to my kids and they have no idea it's made with tofu!
When my youngest daughter, Kiana Jr. found out the pudding was made with Tofu, she started serving "Mommy's Tofu Pudding" to her stuffed animals in her pretend kitchen 🙂 soooo adorable.
Ingredients:

1 16 oz. package silken tofu

1/3 cup cocoa powder (look for 70% dark chocolate cocoa)

1/4 cup stevia extract (or if you're naughty 1/2 cup sugar)

1 tbsp. vanilla extract

1 mashed banana

2 scoops chocolate protein powder

1/2 - 1 cup almond milk (or your favorite milk) adjust amount depending upon the thickness of the pudding when you're blending it

1/2 dark chocolate bar or 1/2 cup dark chocolate chips (70% cocoa) I like Lilly's Dark Chocolate sweetened with Stevia a natural plant extract
Directions:
Add all ingredients except milk in a blender or food processor. Start to blend and add milk until the consistency is thick but pourable, like pudding. Blend until smooth.
Transfer pudding to mason jars, glasses or bowls and refrigerate for at least 1 hour before serving
.
Divide pudding into beautiful, footed dessert glasses and top with grated or shaved dark chocolate. Yum! No guilt and so decadent.
