Recipe: Tomato Feta Salad

Perfect Salad for any meal

I love this salad! It's easy to make and super healthy! Fast & Fit! (By the way, who wants to cook in a hot kitchen in the summer? NOT ME!) Here is a delicious SIMPLE healthy recipe that I love! It's a wonderful salad to go with any barbecue or on its own.  Hope you enjoy it too! Aloha!

Make sure you pick tomatoes that you would enjoy eating by themselves, without and dressing. I love the organic grape tomatoes. They are so sweet and fresh that we often take a container with us and eat them as a snack. They are that good!

  • 2 containers of Organic Grape Tomatoes (red or yellow or both 🙂
  • 3 Tbs. good quality Olive Oil
  • 1/8 cup good quality white wine vinegar
  • salt and pepper
  • 1 small red onion
  • 1/8 chopped fresh organic basil (appx. handful)
  • 1/8 cup chopped organic flat leaf parsley (appx. handful)
  • 1/2 container crumbled Feta Cheese (more or less to fit your taste) Block feta is good too!

Rinse tomatoes and slice in half length wise.

Finely mince the red onion. (Eek! I tried to mince it tine, but could not. I have super sensitive eyes and it was burning my eyes like crazy, so I did the best I could and fast. I'm thinking of buying some Onion Goggles to protect my eyes while chopping onions! Even though the onions were larger, it was still really yummy!) Okay stop obsessing over that, Kiana. Let's move on!

Put in large glass bowl. I like to use glass bowl for this recipe so you can see the beautiful colors!  Add diced onion, vinegar, olive oil, salt, pepper, basil and parsley. Toss well.

Gently fold in crumbled feta. (If using block feta, dice into little cubes first).

Store in refrig in covered container until ready. Serve chilled or at room temperature. Delicious salad to go with my Healthy Hawaiian Kiana Kabobs! Recipe here
