Fit Food Tip: 1 Min. Breakfast / Egg in a Cup

As a busy mom of 2, mornings are so hectic. Getting them ready for school, breakfast, arguing over brushing their hair, blah blah blah, you know the scoop. Here is a natural, healthy protein breakfast that you can make in 1 min. At the same time you start making it, pop the whole wheat toast in the toaster and put on some natural peanut butter and you're ready to go!

  • 2 Eggs
  • 2 Tbs. Milk or Water
  • small handful shredded cheese optional
  • salt and pepper optional


Spray non stick cooking spray in sizeable microwavable coffee cup or bowl. Add eggs and beat with milk/water. Microwave on high 45 seconds, stir. Put back in for another 30-45 seconds. Sprinkle with cheese, salt & pepper. Caution: eggs will be hot.

Tip: I will also add egg whites to my steel cut oatmeal for complex carbs/protein breakfast.
