Fit Moms: this is also a keto friendly recipe if you use heavy cream and low carb fruit such as raspberries or blue berries. just skip the sugar. if you eat low carb and avoid sugar, it will naturally taste sweet from the fruit 😉
Here is a fun way to make your own ice cream. My kids and I made it this summer. I don't enjoy ice cream as much as the rest of my Ohana, family, unless there is more nutritional value to it. That's why this recipe is so wonderful: you can customize it to make it as healthy or unhealthy as you want! Hope you enjoy it as much as we do!
Go for it: Mason Jar Ice Cream
Ingredients:
- Mason Jars (large size is best) Wash, rinse, dry
- 1 cup Heavy cream 0r whipping cream per Mason Jar (Eek! I know, I know. But read on Fit Mom 🙂
- 1 Tbs. Sugar (My kids see white sugar maybe 1-2 times per year!? Look at that smile!)
- 1/2 tsp. pure vanilla extract
- sprinkle of salt (love the salty sweet)
- Sprinkle of your Favorite fruit(s)
- Favorite healthy, crunchy toppings: coconut flakes, nuts, etc. (add after it's frozen on top of your ice cream)
- Favorite junky treats: chocolate chips (make it healthier with dark chocolate chips minimum 70% cocoa), gummies, etc.
Directions:
Add ingredients to Mason Jar (except crunchy toppings). Now here's your little core & arm workout: SHAKE IT FAST for 4-5 minutes!
Tight core while you shake 🙂 My kids loved to take turns shaking it. Check the consistency, it should be opaque when done, covers a wooden spoon, not runny.
Freeze appx. 3 hours. Let sit on counter for 5 minutes before serving so it's creamy. Having just moved into our newly remodeled home, we have a new refrigerator (yay!) so it was really frozen! Top with your crunchy treats: nuts, coconut flakes and enjoy!
Healthier Version: Muscle Mason Jar Ice Cream
Ingredients:
- Mason Jars (large size is best)
- 1 cup 1/2 & 1/2 per Mason Jar (less fat, ice cream not as creamy but still tastes yummy)
- 1 Tbs. Stevia a natural plant extract (optional)
- 1/2 tsp. pure vanilla extract
- Favorite fruit (I used peaches, blueberries & pineapple. Mmmm.)
- Favorite healthy crunchy toppings: coconut flakes, nuts, etc. (add after on top of your ice cream)
- Dark chocolate chips, minimum 70% cocoa
- 1 Tbs. Protein Powder (chocolate or vanilla)
