KIANA’S HEALTHY GRANOLA RECIPE

Aloha Flex Appealers! How about some of my tasty good for you granola? It's so delicious on Greek Yogurt, in smoothie bowls or to eat as trail mix on the way to workout. I modified my Mom's family recipe to be lower in sugar and use all-natural ingredients.

It's so simple to make and you can customize it to include your favorite nuts, such as almonds and pumpkin seeds and other goodies such as dried cranberries, other dried fruit, unsweetened coconut or dark chocolate chips!

Ingredients:

  • 4 Cups Oats
  • 1 1/2 Cups almonds
  • 1 1/2 Cups pumpkin seeds
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 cup organic virgin coconut oil
  • 1/2 cup maple syrup  (agave nectar or honey work too)
  • 1 tsp pure vanilla extract
  • Customize it! 1/2 cup each of your favorite goodies! I used Unsweetened coconut, dried cranberries

Directions:

Preheat oven to 350 degrees.

Line a rimmed baking sheet with parchment paper.

In large bowl, mix oats, nuts, salt, cinnamon and nutmeg.

In small bowl, heat coconut oil in microwave until liquified. Add maple syrup and vanilla. Mix.

Pour into oat mixture. Mix well to evenly coat oats and nuts.

Pour onto sheet and spread into even layer.

Bake 20 minutes. Remove from oven and stir well so that all ingredients brown evenly.

Bake 15 more minutes. Taste the granola, it should be toasty and crunchy.

Add optional goodies: unsweetened coconut flakes and cranberries. Bake 5-10 minutes.

Remove from oven and cool. Tip: Granola will continue to get crunchy as it cools. When cool, store in airtight mason jars or similar container.

Enjoy on Greek Yogurt, on smoothie bowls, as cereal or trail mix snacks.
