If you like Sushi, you will love this! It's fast to make and easy to customize with your favorite protein and whatever veggies you have in the fridge. I made mine with shrimp. my kids loved making this with me. So fun & healthy!

Prep time: 15 min.


1 package fresh shrimp, crab meat or your favorite protein

seaweed diced or furikaki seasoning

diced avocado

diced cucumber (I prefer English cucumber it stays crisp longer)

brown rice or sticky white rice

1 tsp rice vinegar

low sodium soy sauce

Measuring cup or rice mold

Spicy Mayo: light mayonnaise or greek yogurt, sriracha, low sodium soy sauce


Prepare rice in rice cooker or microwave in package as directed. Cook shrimp by quickly cooking in pan sprayed with non stick until opaque. Dice the cucumber, avocado and shrimp.

Make Fit Stacks:

Spray measuring cup or rice mold with non stick spray. Add cucumber, avocado, shrimp and then rice. Pack rice in. Put plate on top and flip over, tap and remove the cup / rice mold. Ta da! Sprinkle with furikaki seasoning and top with Spicy Mayo! Yummy!
