INGREDIENTS:

SERVES 4 | PREP TIME 10 MIN. | NON-ACTIVE TIME 25-30 MIN.

  • FRESH WILD CAUGHT SALMON OR FROZEN (I AVOID FARM RAISED FISH)

  • 2 TBS. MINCED GARLIC (FRESH OR PRE-MINCED)
  • 2 tsp. FRESH OR DRY GINGER POWDER
  • 1 tsp. RED PEPPER FLAKES (MORE OR LESS ACCORDING TO YOUR TASTE)
  • 1/3 CUP LOW SODIUM SOY SAUCE
  • 1/2 CUP BLUE AGAVE NECTAR OR HONEY
  • 1/4 CUP COCONUT AMINOS (OPTIONAL BUT ADDS FLAVOR AND +NUTRIENTS)
  • 2 TBS. OLIVE OIL

SUBSTITUTIONS:

  • NO AGAVE? HONEY OR MAPLE SYRUP WORKS
  • NO SOY SAUCE? COCONUT AMINO WORKS
  • NO FRESH GINGER? DRY POWDERED WORKS

DIRECTIONS:

PREHEAT OVEN TO 375º, IF USING AN *AIR FRYER, 7-8 MIN. AT 390

ADD ALL INGREDIENTS TO LARGE MEASURING CUP WITH SPOUT TO MAKE IT EASIER TO POUR OR A MEDIUM BOWL. STIR. ADD SALMON AND MAKE SURE ALL FILLETS ARE COVERED. MARINATE 20-30 MIN. IN REFRIGERATOR. SPRAY SHALLOW BAKING PAN WITH NON-STICK, I LIKE THE COCONUT AND AVOCADO OIL SPRAYS. ADD FOIL. PLACE SALMON ON FOIL AND POUR REMAINING SAUCE ON TOP. SEAL FOIL A BIT AND BAKE 20 MIN. UNTIL INTERNAL TEMP. REACHES 135º-145º (COOKING THERMOMETER I LIKE HERE-I'VE TRIED DOZENS THIS ONE IS A WORKHORSE)

TURN UP OVEN TO BROIL AND BROIL FOR 5-8 MINUTES UNTIL BROWNED AND CARAMELIZED ON TOP. DO NOT SKIP THIS STEP. MAKES IT "RESTAURANT QUALITY" LOL. DO NOT WALK AWAY - WATCH IT SO IT DOESN'T BURN. THIS STEP TAKES THE SALMON OVER THE TOP!

AIR FRYER METHOD: PREHEAT. COOK 7-8 MIN AT 390 UNTIL SLIGHTLY BROWN ON OUTSIDE. SALMON WILL BE MOIST AND TENDER! I LOVE COOKING WITH THE AIR FRYER, SO FAST AND YOU CAN GET FOOD CRISPY WITHOUT A LOT OF OIL. LOVE THE EASY CLEAN UP TOO. PLUS YOU DON'T HAVE TO TURN ON THE OVEN AND HEAT UP YOUR WHOLE KITCHEN! SO VERSATILE!
