Organic Spinach & Lean Ground Turkey

I love this recipe - you don't have to cook the noodles!  I use high protein, low fat cottage cheese instead of ricotta

My Kids LOVE to help make this!

  • 1 package extra lean ground turkey
  • 1 bunch organic spinach
  • 1-2 tsp. minced garlic
  • 1 tsp. oregano
  • 1 tsp. basil
  • 1 Tbs. olive oil
  • 1/2 cup diced onion
  • 1 Can pasta sauce
  • 3/4 cup shredded mozzarella
  • 2 eggs
  • 1 small carton reduce fat cottage cheese
  • 1/4 cup Parmesan cheese
  • 1 box Lasagna noodles (try Barilla, they make noodles with extra protein!)


Get ready to make this delicious lasagna that is loaded with protein, veggies and flavor! Protein Lasagna 1

Preheat oven to 350 degrees. Heat non stick pan on med / high. Add olive oil and cook onions and garlic until onions are translucent.  Add turkey, brown evenly. Protein Lasagna 9

Add pasta sauce. Simmer. Rinse spinach*, boil for 5 min. and chop.  *I put the spinach in large bowl of water, swish. Dirt settles to the bottom, rinsed leaves on top 🙂 Protein Lasagna 14

In small bowl beat eggs, add oregano, basil, Parmesan cheese and cottage cheese. Protein Lasagna 10

Spray large 13x9 pan with non stick spray. Add a little meat sauce on the bottom of the pan. Protein Lasagna 11

Layer uncooked lasagna noodles on top of the sauce, add egg mixture, spinach, mozzarella, meat sauce.

Repeat layers until all ingredients used up. Save a couple handfuls of mozzarella. (Have your kids help, mine love to make the layers!) Protein Lasagna 3

Cover with foil. Bake 45 min. After 45 min. remove foil and top with mozzarella.

Cook 15 min. more uncovered. Let sit for 15 min. before serving. Protein Lasagna 2

Mmm.  Moist, healthy and yummy.  Serve with side salad, garlic bread and glass of cabernet. Aloha! Protein Lasagna 1
