Come home to a delicious dinner ready for you
I love the slow cooker. You just put everything in in the morning and come home to a delicious smelling house. It's perfect for busy days. It's like having a chef prepare dinner for you. My kids love this recipe because the meat is so tender, it literally falls off the bone. It's ideal for those nights when you need to keep dinner warm for a family member. My Fire Chief hubby often gets home late and you cannot over cook this recipe. It saves well for EZ reheat on busy days for lunch or dinner, too!

This recipes is wonderful, you probably already have most of the ingredients... 🙂
Ingredients:
- 6 to 8 skinless chicken breasts or thighs (If you choose to leave the skin on, remember to remove the skin before you eat it)
- Half cup ketchup
- 1/2 cup low-sodium soy sauce
- 1/2 cup vinegar (optional. Makes it taste more like a slow cooker version of my popular Adobo Chicken recipe)
- splash of white wine
- 1 teaspoon dried basil
- 1/3 cup organic honey
- 1 teaspoon minced garlic
- 1 teaspoon ground or fresh chopped ginger
Directions:
Spray your slow cooker or crock pot with nonstick cooking spray. Place chicken skin side up, if skinless, put meaty side up, bone side down. You can use skinless chicken breasts or thighs. Leaving the skin on makes it juicier, just make sure to remove it before serving.
In a bowl, whisk all ingredients together
Add everything in one bowl: soy sauce, garlic, ketchup, ginger, wine, honey...
I always keep low sodium soy in the refrigerator
Pre minced garlic is so quick and easy for busy days, when you don't have a minute to spare

You can use fresh or dried basil

Organic or regular honey

Stir all ingredients together. Don't forget the ginger, wine, vinegar (optional)

Pour on top of the chicken, covering every piece

Cover all chicken. Cook on high for 4 hours or low for 6 hours.
Serving suggestions: serve with brown rice, sticky rice or Jasmine rice and side salad. I like to have the vegetables and salad take up more than 1/2 of my plate 🙂
