What’s for dinner tonight? 

How about my MANGO SALSA SALMON? Only takes 15 minutes! Super healthy, simple and so delicious! 

It’s loaded with protein, healthy, fats, vitamin C, and lots of flavor! 

Ingredients: Salmon filet, mango, multi colored bell peppers, red onion, low sodium soy, honey or agave nectar, pre-minced garlic & ginger, (pre minced cuz this is fit fast food), olive oil. Panko, pepper, parmesan cheese optional.

Directions: Preheat air fryer or oven to 400 degrees. Marinate salmon in olive oil, soy sauce, ginger, garlic and honey or agave nectar. Set aside while you make the mango salsa.

Mango Salsa: Chop bell peppers, mango and onion. Tip: get the veggie chopper I found on Amazon – makes it fun and fast!

Dredge salmon in Panko on both sides. Bake in preheated air fryer or oven 400° 8-10 min until opaque inside.

Serve hot with jasmine or brown rice. Top with the mango salsa. Enjoy!
