Got left over cereal? In my house there always seems to be a little bit of cereal at the bottom of the box that no one eats yet puts back on the shelf. I was brought up that you don't waste food. Instead we make left over cereal cookies. I love them because it's a healthier cookie!
Ingredients
- 1/2 cube butter or margarine
- 1/2 cup applesauce
- 1 whole eggs
- 1/2 cup stevia
- 1/4 cup whole wheat flour
- 1/2 cup flour
- 1/2 tsp. baking soda
- 2-3 cups cereal
- 1 tsp vanilla
- 1/2 cup 70% dark chocolate
- 1/2 cup dried fruit
Instructions
- Cream together: butter, applesauce, the egg, vanilla and stevia. Stir together: the 2 flours, baking soda. Fold in dry cereals. Mix wet and dry ingredients together. Add in optional: dark chocolate pieces, raisins, dried fruit (cranberries, apricots, mango, pineapple, etc.), trail mix, almonds, coconut. Stevia is a healthy sugar replacement, a natural plant extract found in health food stores. Did you know? You can substitute 1/2 amount of butter with mashed avocado or apple sauce.
