Lazy Weekend Breakfast Potatoes
Yawn. :O Relaxing on a lazy weekend is good for the soul. Sometimes, my family and I take a lazy morning and stay in our PJ's til noon. It's rare, but it happens. I usually make a huge breakfast that includes my family favorite Breakfast Potatoes. Hope you and your family will love them too. The house smells so yummy and they are great to reheat in the pan the next day too!
Ingredients:
- 4 to 6 medium potatoes peeled and cubed
- Small onion diced
- Medium red or green bell pepper diced
- Tablespoon chopped garlic
- Salt-and-pepper
Directions:
Heat a nonstick pan on medium high. Add 2 tablespoons canola oil. Cook onions until translucent during frequently. Add garlic and stir. Add potatoes and bell peppers stir completely. Cook 3 to 4 minutes then stir so that the potatoes are evenly browned and slightly crunchy.
Oven option:
Place all the ingredients on a cookie sheet lined with foil (makes an easy cleanup) bake at 350° for 25 minutes. Stirring occasionally. Increase the temperature to 450° for appx five minutes until potatoes are brown and crunchy.
Serve alongside scrambled eggs, fresh fruit, coffee and juice.
