Aloha! I love this recipe for Healthy Udon Soup because it is very fast and simple to make, saves well in the refrigerator for easy reheat and tastes delicious! I love this recipe because it’s also customizable, so you can add your favorite vegetables and protein to make it your own. Enjoy!
1 package udon noodles
2 cartons organic chicken broth or bone broth
1 bunch book choy
2 minced green onions
3 Tbs. minced garlic
1/4 minced onion
1 carton firm tofu
4 Tbs. low sodium soy sauce
1/2 package stir fry veggies or thinly slice carrots, baby kale, snap peas, broccoli, red cabbage
4 shitaki mushrooms
Rinse and chop vegetables. Leave bok choy whole. Drain and dice tofu.
Bring chicken broth to boil. Add All ingredients. Summer 5 minutes. Serve hot. Mmmmm.
