Recipe | Healthy Udon Noodle Soup with Vegetables

Aloha! I love this recipe for Healthy Udon Soup because it is very fast and simple to make, saves well in the refrigerator for easy reheat and tastes delicious! I love this recipe because it's also customizable, so you can add your favorite vegetables and protein to make it your own. Enjoy!

My Ohana LOVES Udon Soup! We have it in Hawaii many times!

INGREDIENTS

1 package udon noodles

2 cartons organic chicken broth or bone broth

1 bunch book choy

2 minced green onions

3 Tbs. minced garlic

1/4 minced onion

1 carton firm tofu

4 Tbs. low sodium soy sauce

1/2 package stir fry veggies or thinly slice carrots, baby kale, snap peas, broccoli, red cabbage

4 shitaki mushrooms

black pepper

DIRECTIONS

Rinse and chop vegetables. Leave bok choy whole. Drain and dice tofu.

Bring chicken broth to boil. Add All ingredients. Summer 5 minutes. Serve hot. Mmmmm.
