Since we're all on self quarantine, make some comfort food and clean out your pantry! Now is a great time to use that leftover can of pumpkin from Thanksgiving and make PUMPkin Bread!

Ingredients:
- Organic virgin coconut oil
- 1/2 cup low sugar maple syrup or organic honey
- 2 eggs
- 1/2 15 oz can of Organic Pumpkin, or 1 cup (Tip: add the other half of the can to your smoothie)
- 1/4 cup plant-based milk
- 1 1/2 tsp. pumpkin spice blend
- 1 tsp. baking soda
- 1 tsp. vanilla extract
- 1/2 tsp. salt
- 1 3/4 cups white or regular whole wheat flour
- cinnamon to sprinkle on top before putting in oven
- Customize your PUMPkin Bread: 1/2 cup almonds, pumpkin seeds, dried cranberries, walnuts, pecans, dried fruit, raisins, dark chocolate chips, unsweetened coconut, etc. to add to the bread
- unsweetened coconut, walnuts, pecans, almonds to sprinkle on top 5 minutes before it's done
