PUMPkin Bread Recipe | Boost Immune System with Pumpkin

Since we're all on self quarantine, make some comfort food and clean out your pantry! Now is a great time to use that leftover can of pumpkin from Thanksgiving and make PUMPkin Bread!

Ingredients:

  • Organic virgin coconut oil
  • 1/2 cup low sugar maple syrup or organic honey
  • 2 eggs
  • 1/2 15 oz can of Organic Pumpkin, or 1 cup (Tip: add the other half of the can to your smoothie)
  • 1/4 cup plant-based milk
  • 1 1/2 tsp. pumpkin spice blend
  • 1 tsp. baking soda
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt
  • 1 3/4 cups white or regular whole wheat flour
  • cinnamon to sprinkle on top before putting in oven
  • Customize your PUMPkin Bread: 1/2 cup almonds, pumpkin seeds, dried cranberries, walnuts, pecans, dried fruit, raisins, dark chocolate chips, unsweetened coconut, etc. to add to the bread
  • unsweetened coconut, walnuts, pecans, almonds to sprinkle on top 5 minutes before it's done

Directions:

Preheat oven to 350 degrees. In a large mixing bowl, add all wet ingredients. In a separate smaller bowl, mix all dry ingredients. Pour dry ingredients into the wet ingredients. Fold in your custom ingredients such as nuts or dried cranberries, etc. Pour batter into loaf pan sprayed with nonstick or oil. Bake 60 min. or until chopstick or toothpick comes out clean.
