Carrot Cake Protein Balls

I love these Carrot Cake Protein Balls. They are so easy to make and no bake! Natural whole food ingredients + Protein! Naturally sweet, soft & moist. Delicious!

Ingredients:
1 cup shredded carrots
1/2 cup walnuts
1/2 cup dates
2 Tbs. oats
1 Tbs. unsweetened shredded coconut
1/4 cup vanilla protein powder (pea protein for vegan)
1/3 Tbs. Chia seeds
1/2 tsp. cinnamon
1/4 tsp. ginger
1/4 tsp. nutmeg
 
Directions:
put all of the ingredients into a food processor. Pulse until blended. Roll into balls. Put on parchment paper (I ran out lol.) Place in freezer 15 min…..Now make the Cream Cheese Frosting!

Cream cheese frosting

Cream cheese frosting:
1 container cream cheese at room temperature (regular, low-fat, or plant-based cream cheese all work)
1/4 cup full fat Greek Yogurt
3 Tbs. pure maple syrup
1 teaspoon vanilla extract
 
Directions:
blend with handmixer until creamy. Dip the carrot cake balls into the cream, cheese frosting. Sprinkle with carrots & unsweetened coconut flakes….YUM! Store in airtight container.
