RECIPE: SUPER FOOD SOUP

Aloha! In this Kiana’s Fit Cooking recipe I show you how to make a flavorful meal that will boost your immune System and flex your taste buds!💪🏼

This could be either a Stew or a hearty soup, simply By adjusting the amount of water or coconut milk you use.

Ingredients:
In large soup pan, add 1 Tbs. each Green & Red Curry Paste, 1 Tbs. Chili Paste, 3 Tbs. Fresh minced ginger root, 2 Tbs. minced garlic, 1/2!diced onion, 1 pkg. shiitake or regular mushrooms, 1 Tbs. turmeric. Sauté the above in 1-2 Tbs. Virgin coconut oil for 10 minutes on low.

Pour in 3 cans of coconut milk. Stir.

Chop the following into bite sized pieces: 
4-6 colorful carrots, (I used purple, white, orange carrots) or (traditional carrots) and 4-6 small-medium potatoes (sweet potatoes, purple potatoes, Yukon Gold or Russet potatoes work. I did a combination of the above.

Add to Pot. Gently stir. Cook on low until carrots and potatoes soften appx 15-20 min.

Drain Tofu and cut into bit sized squares. (Chicken works too of you aren’t plant based.) Gently fold into mixture, add to soup pot.

Simmer on low. Serve hot over sticky white rice and top with avocado, fresh cilantro and a squeeze of fresh lime juice.🌴💪🏼☀️
