Ingredients:
- 2 lbs. Chicken : Thighs or breasts (skin removed)
- 1/2 cup low sodium soy sauce (adjust to your taste)
- 1/2 cup apple cider vinegar (adjust to your taste)
- 1 tsp peppercorns or 1/2 tsp black pepper
- 2 Tbs. minced garlic
- 1 cup water
- olive oil
- 2 bay leaves
Directions: Sautee garlic in olive oil. Add chicken and brown both sides. Put into crock pot. Top with soy sauce, vinegar, peppercorn, bay leaves and water. Cover and cook on low 4-5 hours.
Tip: This dish gets better the longer it sits. This recipe is ideal for people who want the house to smell delicious when you come home or if your family comes home at different times, eating earlier, later, etc. It also saves really well for easy reheat on busy days.
You can choose to marinate it in the soy / vinegar / garlic if you have more time. Or cook on low for 1-2 hours on the stove if you’re home to watch it.
Serving suggestions: Serve hot over jasmine rice, brown rice with your favorite greens such as green beans, kale, edamame, boy chow, broccoli, etc.
