Fit Fast Food
Linguini and Clam Sauce
Time: 15 minutes
Ingredients:
- 2 cans minced clams + juice
- 1/2 cup Kerrygold unsalted butter (butter made from grass fed cow, more pure)
- 1/2 cup olive oil
- 2 Tbs. minced garlic
- 1 Tbs. chopped fresh organic parsley
- 1 Tbs. chopped fresh basil
- ground black pepper
- 1/4 tsp red pepper flakes (optional but so good!)
- 1 package spinach pasta or your favorite pasta
Directions:
In small sauce pan, heat olive oil and sautee garlic to flavor the oil. Add clams, butter, black pepper, red pepper, basil and parsley. Bring to boil, reduce to simmer. Cook pasta according to instructions. Drain. Serve pasta hot topped with the sauce and a sprinkle of fresh parsley.

- Buy pre-minced garlic for faster prep
- Barilla makes a protein pasta for extra protein, less carbs
- Try specialty pastas from health food stores for more homemade taste and texture
- Parsley is easy to grow
- Keep cans of minced clams in the pantry to easily make this meal without having to go to the grocery store
- Buy a living Basil plant and keep on your kitchen counter for fresh basil anytime and it looks nice, too. More cost effective than buying basil in those plastic containers for 1 meal.
