Kiana's Protein Carrot Cake – No refined sugar! Healthy, easy, and all-natural! ?? I saw this viral recipe on Tik Tok. I decided to try It and make a few modifications: make protein frosting, added protein to the batter, unsweetened coconut, maple syrup and toasted pecans. Next time I will pump it up and add another scoop of protein and make more protein frosting!

Preheat oven 350 degrees.

Ingredients: Cake

  • 2 bananas mashed
  • 1-1 1/2 scoops vanilla protein powder
  • 1 medium carrot grated
  • 1 1/2 cup unsweetened almond milk or milk of your choice
  • 2 cups organic regular oats
  • 1/2 tsp cinnamon 
  • 1 tsp baking powder

Frosting:

  • 1 cup unsweetened greek yogurt
  • 1 Tbs organic maple syrup
  • 1/2 cube reduced fat cream cheese

Topping:

  • 1/2 cup unsweetened  coconut flakes
  • 1/4 cup pecans or walnuts chopped

Directions:

Mix Carrot Cake ingredients in bowl. Pour in glass pan sprayed with non stick coconut oil spray or similar.  Bake 350 degrees 25-35 min. until toothpick comes out clean.

Frosting
Mix all ingredients together. Spread on cake when cake has cooled.

Topping: Toast the coconut and pecans in oven while preheating. Tip: coconut takes 3 min.

Top with toasted coconut and pecans! FIT YUM!
