Lemon Garlic Chicken with Crunchy Roasted Potatoes
Why I LOVE LOVE LOVE this recipe:
1 dish wonder: super easy cleanup! Great dish for parties because you can make the entire recipe in one disposable foil pan! Great to take to the beach, picnic, house party or bbq.
Sunset Ohana time: Because it bakes for 40 minutes total (Appx 20/20) it's the perfect dish to put in the oven while you enjoy the sunset and appetizers with your Ohana (Hawaiian for Family)
I love this recipe because it bakes in the oven for an hour. It gives us a chance to enjoy the sunset !
Ingredients:
Preheat oven to 425 degrees
For Chicken
- 2 pounds skinless boneless Thinly sliced chicken breast
- One lemon
- Tbs. crushed red pepper flakes
- 3 tablespoons olive oil
- 2 Tbs. minced garlic
- Course salt and pepper
For Potatoes
- 2 lbs. red potatoes
- 3 Tbs. extra virgin olive oil
- 2 Tbs. minced garlic
- 1 Tbs. red pepper flakes (adjust to how hot you want it. I like it hot 🙂
- Coarse salt and pepper
Directions:
Preheat oven to 425°. Spray a deep dish roasting pan or disposable foil pan with nonstick spray. Scrub red potatoes and cut into quarters.
Put into roasting pan
Toss with olive oil

Salt & Pepper
sprinkle with crushed red pepper
Put in oven at 425° for 25 minutes until slightly brown.
While potatoes are roasting, sprinkle chicken with salt and pepper.
In a medium non stick sauce pan heat 4 tablespoons olive oil.

Add garlic and brown until light golden.
Busy Fit Mom Tip: I mince fresh garlic cloves when I have the time. I'll use pre minced garlic when I'm pressed for time.
Remove from heat & add lemon juice
and 1 Tsp. crushed red pepper flakes
More or less to taste. Mix well.
MARINATE! Pour mixture over chicken to marinate while potatoes are cooking.
Take roasting pan out of the oven when potatoes are slightly browned. Move potatoes to the sides. Put chicken in center of potatoes
Pour remaining garlic sauce on chicken
Bake 20-30 more minutes until chicken is done 160° inside
(cooking time will vary depending upon thickness of chicken)
When chicken is done, remove from pan. Leave potatoes in pan. Turn up heat to 475 degrees and bake 10-15 more minutes until brown & crunchy
Enjoy with vegetables, butternut squash or side salad
Busy Fit Mom Tip: If you have time, buy fresh organic veggies. No time? use frozen vegetable stir fried in coconut oil
