1 Min. Breakfast / Egg in a Cup / Nutrition Facts

As a busy mom of 2, mornings are so hectic. Getting them ready for school, breakfast, arguing over brushing their hair, blah blah blah, you know the scoop. Here is an easy, healthy protein breakfast that you can make in 1 min. At the same time you start making it, pop the whole wheat toast in the toaster and put on some natural pnut butter and your ready to go!
- 2 Eggs
- 2 Tbs. Milk or Water
- small handful shredded cheese optional
- salt and pepper optional
Directions:
Spray non stick cooking spray in large microwavable coffee cup or bowl. Add eggs and beat with milk / water. Microwave on high 45 seconds, stir. Put back in for another 30-45 seconds. Sprinkle with cheese, salt & pepper. Caution: eggs will be hot.
Fit Mom Tip: I will also add egg whites to my steel cut oatmeal for complex carbs / protein breakfast.
